Anna was born in Naples, Italy where she gets her inspiration for cooking. Marcia's passion comes from her grandmother who was also from Naples. We grew up with this incredible food which has been handed down though the generations. We come together to bring these dishes in a more healthy and yet delicious manner. Through this blog, we share our personal ideas and opinions from our life experiences in hopes that you will enjoy them as much as we do.
How do Italians eat so much pasta yet do not gain weight?
Could it be that they walk more and are more active? Yes.
Could it be that the pasta produced in Italy has only two key ingredients- Semolina flour and water. In our opinion, yes. Why do we need seven ingredients in pasta? Please recognize all the extra ingredients that are listed on the packaging and choose wisely- you'll be healthier for it. If we are going to eat carbs, eat quality pasta and maybe, just maybe, we won't get as fat. LOL.
This recipe has been a staple in our homes. This would normally be called fried macaroni frittata. This recipe is baked, uses high quality pasta and includes eggs and lots of vegetables.

Baked Macaroni Frittata
1 lb. cooked. pasta
12 eggs, beaten
2 c. fresh or frozen vegetables of your choice
1/2 c. shredded parmesan (not that crap in the container, it's full of fillers!)
1 T. dried herbs of your choice- we prefer basil
Salt and pepper to taste
Mix all ingredients together and pour into pie dish prepared with cooking spray. Bake 35 - 45 minutes in a 350 degree oven.

ReplyDeleteHi Alexa! Thank you for asking. We will be posting more about the subject in future posts, but in a nutshell, the first thing you need to make a great sauce is time- good sauce needs a minimum of 3 1/2 hours of simmering time. The second secret is our 'sauce starter' which is made in advance and put in the freezer for future use to save a lot of prep time.
